If you saw my most recent blog post, you know that I’m currently expecting a baby. Ah… it feels good to not have to come up with yet another reason for posting yet another mocktail recipe.

I actually saw this recipe on my Insta friend @techieblends page. You can find Sundeep’s original post here. The moment I saw it, I knew I had to make it. I love using oleo saccharum in drinks and this looked like a great way to highlight it.

If you’re unsure what oleo saccharum is, it’s essentially a citrus-y sugar syrup that happens when you let citrus peels and sugar hang out for a bit. You can see how I make mine by reading this post. It’s suuuper easy. Promise. If you can make simple syrup, you can make oleo saccharum.

Sundeep called this recipe a Lemon Fizz Mocktail. And while that name is definitely fitting, I started toying around with the idea of calling it a Limoncello Mocktail. You see, the processes of making oleo saccharum and limoncello are actually quite similar. Just… minus the alcohol. And then I went to the grocery store to buy some lemon sparkling water and saw that LaCroix actually makes limoncello-flavored sparkling water. I knew that the Limoncello Mocktail was meant to be.

I thought the LaCroix limoncello sparkling water (not sponsored, btw) would taste similar to their lemon flavor. But it’s actually very different. I was surprised. It definitely has a more… subdued?… flavor. The lemon isn’t in your face and it’s got a slight floral taste to it. I really dig it. It’s pricey on Amazon but if you can find it at your grocery store, I recommend buying it!

If you can’t find limoncello sparkling water, regular lemon sparkling water would definitely work in this Limoncello Mocktail recipe. Sundeep actually used club soda in his original recipe and he said that he’s also tried it with ginger beer with great results. I think a ginger beer version sounds ah-mazing. I’ll be trying that next.

I did promise you guys in my newsletter and on my IG account that I’d always give you guys ideas for how to turn the next few months’ worth of alcohol-free recipes into alcohol-full ones. And today I’m sticking to my word. If you want to turn this mocktail into a cocktail, add 1 1/2 ounces of your favorite vodka.

Once baby #2 gets here, I plan on making my own real limoncello. But until then, this Limoncello Mocktail will definitely hold me over.

  • 1 1/2 oz freshly-squeezed lemon juice (please. fresh. you should have leftover lemons after peeling them for your oleo saccharum anyway.)
  • 1 oz oleo saccharum (click here for an easy recipe)
  • 2+ oz limoncello-flavored or lemon-flavored sparkling water, unsweetended

We’re well into the holiday season and I’ve yet to make a Christmas-y drink. I know. I’ve been wasting precious days. But I’m gonna try to make up for it. While a Cape Codder is not traditionally a holiday cocktail recipe, adding some cranberry red wine reduction syrup gives it that feel.

I’d been looking for ways to use up the last 1/2 oz of my cranberry red wine reduction syrup for several days before I thought of this Christmas in Cape Cod idea. The syrup is so good, y’all. So good. It was fantastic in The Bride Wore Red and in this mocktail recipe. But I wanted to really highlight the cranberry flavor in the syrup. There’s no more classic cranberry cocktail recipe than a Cape Codder.

The Cape Codder was also previously called the Red Devil. Apparently, the name change came about in the 60s because Cape Cod, Massachusetts is pretty well-known for its cranberries. My Instagram friend, @risajamesphotography, has a better theory. She said her guess is that’s because the drink was created during the Cold War, and Red Devil had too much of a Communist slant to it. I can’t help but think there could be some truth in that, too!

Risa is also the reason I served this cocktail in the glassware that I did. She told me that she loved my peacock glasses so much that she’d plan recipes around them. And then she proceeded to send me the link to a Cape Codder recipe saying “Make this drink in the peacock glass!” Well Risa, done & done. Thanks for the suggestion!

If you want to make a traditional Cape Codder, just leave out the lemon-lime soda and the cranberry red wine reduction syrup.

I love cocktails (obvs) but every now and then, I ditch the alcohol and enjoy a good ol’ mocktail. Actually, I frequently drink mocktails during the day but those are typically super easy (fresh juice + sparkling water). But when I make a mocktail at night, I want it to ~feel~ like a cocktail. Just a non-alcoholic cocktail.

There’s actually a bit of a push these days in the beverage world to stop saying “mocktail” and use the term “alcohol-free cocktail” or “non-alcoholic cocktail” instead. People claim that the word mocktail has negative connotations, that it makes a drink sound inferior and even childish. I can see where they’re coming from. A non-alcoholic cocktail does sound a bit more upscale, I suppose. But regardless of which term you like to use, this Grapefruit Rosemary Spritzer is a dang one.

This booze-free beverage was actually inspired by my young daughter. You see… she loves sparkling water. I mean loves. Actually, obsessed may be a more fitting term. I can’t crack open a can of anything without her running from the other room to ask for some. Now, she’s totally content with just sparkling water. But I wanted to make it a little more fun for her. Then I remembered I had some Paloma mix that a company had sent me in the fridge.

I poured some sparkling water into my toddler’s glass and then added a splash of the Paloma mix, turning it a pretty pale pink color. She oohed and ahhed and had seriously chugged it by the time I had put the Paloma mix back into the fridge. She immediately asked for “more peas” (more please) so I poured in some more sparkling water. Well… That was met with a sharp “No” and an enthusiastic gesture towards the fridge. I pulled the Paloma mix back out and she squealed–squealed!— with glee. Oh boy.

If you’re familiar with my cocktails preferences or if you’ve read this post, you know I always say to use fresh citrus when you can. This Grapefruit Rosemary Spritzer does use fresh grapefruit juice; however, when making mocktails or non-alcoholic cocktails, it’s often a challenge to find ingredients to attribute to the overall volume of the drink. Mixers help fill up the glass and are a great way to introduce more flavor to a recipe.

This recipe is actually the perfect one to serve a crowd because it can easily be made into a cocktail by adding your liquor of choice. You could even display a few and let people choose which spirit they’d like to add to their Grapefruit Rosemary Spritzer. It tastes amazing with tequila, vodka, rum, and gin! I’ve never tried it with whiskey, but that could be good, too.

And if rosemary’s not your thing, you could serve it with thyme or even mint or basil. It really is a versatile drink that’s sure to please just about anyone.

I’ve been meaning to share this cocktail recipe for months now. Since I started up this blog, actually. It’s been a go-to of mine for over a year now. It’s definitely more of a summery drink, in my opinion. So I decided I would wait until May to post it. The months ticked by sooo slowly (thanks, pandemic).

But then BOOM summer was here and I got distracted by posting classic summer drinks like Piña Coladas and Mai Tais and Jungle Birds. This spiked cherry limeade recipe faded from memory.

One day I posted a quiz on an Instagram story, asking people what they thought my most popular recipe was. It was (and still is) my Cucumber Basil Refresher but nearly evvverryone clicked “Cherry Limeade Margarita“. Huh. That got my attention. Clearly people are fans of this flavor… OH MY GOSH I NEVER POSTED THE SPIKED CHERRY LIMEADE RECIPE I’VE BEEN WAITING MONTHS TO POST! Buhh what have I been doing with my life?!

Okay, that’s a tad dramatic but really. I was shocked to realized I’d never posted this recipe. So naturally I let several more weeks pass by until I’m finally sitting down to type it out now.

It’s honestly so easy that it feels a little silly to type out. Once you see it, you’ll think “Wow, why did I never think of that?”

Those are actually the same words that I said when my friend shared this recipe with me. It’s a brilliantly simple idea:

cherry limeade drink mix + liquor + Sprite = spiked cherry limeade

You can use this formula to make any manner of fruity boozy beverage– just change up your drink mix. Cherry limeade is an obvious winner, but I’ve done this with a cucumber melon drink mix, a watermelon drink mix, and several others. The options are almost limitless.

I like using the True Lime brand of drink mixes (you can find their black cherry limeade one here) because they don’t use artificial flavors, colors, or sweeteners and their ingredients are also non-GMO. But I definitely have the Walmart brand ones in my pantry, too.

This spiked cherry limeade recipe is almost too easy. If you can stir a drink, you can make this cocktail. You might even have the 3 ingredients on hand already.

As for the liquor to use, take your pick of your favorite clear booze. Vodka is always a good choice because it melds nicely with all flavors. Tequila is great, too, especially if you’re gonna use a citrus-flavored drink mix. Rum’s a pretty safe bet. Gin can get tricky because some gins have a strong juniper taste that might not blend smoothly with some drink mix flavors. But you do you.

You can also use sparkling water in place of the Sprite if you’re looking to cut down on sugar and calories. I’ve found that Spindrift has the strongest lime flavor out of all the lime sparkling waters. It’s my fav and would be amazing in a spiked cherry limeade.

So. Go check your pantry for a drink mix. Pair it with your favorite clear liquor. Pour in something bubbly. Now you’ve got yourself an easy 3 ingredient boozy bev.

My recipe inspiration came in the form of a pint of raspberries that were on the last few days of life and yet were still incredibly tart. I needed to use them up somehow and figured a cocktail would be a great use (naturally). I looked around in my fridge to see what else needed to be used up. Grapefruit juice… a lonely can of grapefruit Bubly.. oh, yeah, I can make this work.

How to make a mocktail with Bubly | This Hype Girl mocktail is made with grapefruit Bubly, fresh raspberries, grapefruit juice, and beet simple syrup.

To tone down the raspberries and the grapefruit, I knew I’d need some kind of sweetener. Simple syrup is the obvious choice but I figured I’d stay on the pink trend and utilize the bag of beet powder hanging out in my pantry. Using beet simple syrup not only makes your drinks a gorgeous magenta color but it also provides a touch of earthiness that keeps your drink from tasting overly sweet. You could definitely make the Hype Girl cocktail or mocktail with traditional simple syrup, but beet simple syrup is way more fun.

This cocktail tastes great with either vodka or gin. Gin lends a more botanical feel while vodka’s clean taste highlights the raspberry and grapefruit. Use whichever you prefer. Or try both versions and tell me which one you like more in the comments!

Pour the gin or vodka and grapefruit juice into a cocktail shaker. If you’re making a cocktail, just skip the gin. Add the raspberries and gently muddle them. No need to destroy them–just smoosh them a bit. Add the beet simple syrup and a generous amount of ice. Shake well.

If you don’t want raspberry seeds in your drink, you’ll need to “double strain” it. You’ll need a small strainer like this one.

Fill your cocktail glass with ice. Hold the strainer over your glass while you pour the drink from the cocktail shaker. This should catch the raspberry bits.

Equipment

  • cocktail shaker or lidded mason jar
  • small strainer

Ingredients
  

  • oz vodka or gin (omit for mocktail)
  • ¾ oz grapefruit juice
  • 4 raspberries
  • ½ oz beet simple syrup *see note for recipe
  • 3+ oz unsweetened grapefruit sparkling water (add more for mocktail recipe)

Instructions
 

  • Add the liquor (optional), grapefruit juice, and raspberries into a cocktail shaker.
  • Gently muddle the raspberries, just enough to smoosh them a bit and release the juice.
  • Add the beet simple syrup and a generous amount of ice.
  • Shake well.
  • Double strain** over a cocktail glass that's been filled with ice.
  • Top off the rest of the glass with the grapefruit sparkling water and stir.
  • Garnish with a grapefruit slice. 

Notes

*Don’t be intimidated by the beet simple syrup. It’s actually quite easy and will only take you a few minutes. Check out the recipe here.
 
**To double-strain, you’ll need a small strainer (like this one). Hold the strainer over your glass while you pour the shaken cocktail. This will catch all the raspberry bits. You can omit this step if you don’t mind the raspberry seeds in your drink.
